Lemon Poppy Seed Muffins (Vegan)

I decided to make a huge batch of muffins so this week during finals I'd have some quick breakfasts and snacks. But... I only have 3 left, and it's only Tuesday. They are delicious.




Lemon Poppy Seed Muffins

2 cups all-purpose flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
5 teaspoons poppy seeds
1/2 cup soy milk
1/2 cup fresh lemon juice 
3 tablespoons lemon zest
1/2 cup oil
1 teaspoons pure vanilla extract
 
Preheat the oven to 375 degrees F.  Mix together the flour, sugar, baking powder, salt, and poppy seeds. In a separate bowl mix together the milk, lemon juice, lemon zest, oil, and vanilla extract. Combine the wet ingredients into the dry and stir until just combined. Fill a greased muffin tin three-quarters of the way full. Bake for 20-25 minutes, or until a tooth-pick inserted in the center comes out clean.
